This ham shoulder comes from Iberian pigs whose mother or father are 100% Iberian and whose food is completely natural. In winter and spring, it feeds on herbs and flowers. In the summer they go hungry, as the pasture dries up and ends up with a diet mainly based on acorns, from October to March, a period called “LA MONTANERA” when the acorns are ripe. CURE for more than 30 months to ensure the best of the product.
